Can they also be used to shred meat?

Yes, I bought for lifting and shredding. They're heavy duty, long, and the tines have great pulling for shredding. I'm now using these instead of the fork shredders used for bbq.

Are these forks made of one piece construction, like the first photo? Or soldered, like the other 3 photos?

Mine are one piece. They work great for many uses. I found them a good buy.

Do the handlebars heat up fast?

Used them last year for thanksgiving no they do not heat up. They were so great I bought some for my sister-in-law who had liked mine. GREAT item if you are cooking Turkey, Prime Rib etc.
