Excellent flour for home use. Make sure to not “overwork” the dough if you want a light and airy product. Makes great gluten free bread

Dying for pancakes!
I have a very limited diet, single food at a time (no combining), no ordinary breads, crackers, grains, corn -- exception amaranth and quinoa. So, decided maybe I could make pancakes with amaranth flour. 4 ingredients: flour, tiny bit of baking soda, baking powder, sea salt, water; with olive oil in the pan. Not your light and fluffy -- but fills my bread craving. (The quinoa flour "pancakes" weren't as good.) I'm pleased with this flour. It's not easy to find. Thank you, Amazon!
